Using a grater, shred the Zucchini (1 cup). Place zucchini in a colander and press out as much moisture as you can. Set aside.

Preheat a waffle iron. Whisk Unbleached All-Purpose Flour (1 cup), Salt (1/2 tsp), Baking Powder (1/2 Tbsp) and Ground Cinnamon (1/2 Tbsp) in a large bowl.
