Step 1
Using a grater, shred the Zucchini (1 cup) . Place zucchini in a colander and press out as much moisture as you can. Set aside.
Step 2
Preheat a waffle iron. Whisk Unbleached All Purpose Flour (1 cup) , Salt (1/2 tsp) , Baking Powder (1/2 Tbsp) and Ground Cinnamon (1/2 Tbsp) in a large bowl.
Step 3
Melt Unsalted Butter (1/4 cup) . Add Milk (1 cup) , Egg (1) and melted butter and mix until combined. Fold in zucchini and Fresh Blueberries (1 handful) .
Step 4
Using a 1/2 cup measuring cup, scoop batter up and pour onto preheated waffle iron and cook according to your iron's instructions.
Step 5
Place a scoop of Lemon Ice Cream (to taste) on top and enjoy!
