Cut Spicy Hot Vegan Sausage (3) into half moons.
In a large soup pot, pour Vegetable Broth (1/2 cup) to cover the bottom of the pot. Add Crushed Red Pepper Flakes (1/2 teaspoon), White Onion (1), Celery (3 stalk), and Garlic (3 clove). Cook over medium heat for 2 minutes, stirring frequently.
Add Green Bell Pepper (1), Red Bell Pepper (1), and Tomato (4). Stir then cover and let cook over medium heat for 5 minutes.
Add spicy hot vegan sausages, Cayenne Pepper (1 teaspoon), Freshly Ground Black Pepper (1/2 teaspoon), Brown Rice (1 cup), and Vegetable Broth (2 cup). Mix well and bring to a full boil.
Reduce heat to low, making sure all the brown rice is submerged in the vegetable broth. Cover and let cook for 30-40 minutes.
Remove from heat. Adjust spice if necessary. Let sit in the pot, covered, for about 10-15 minutes until all liquid is absorbed. Garnish with plenty of Scallion (1 bunch) and Italian Flat-Leaf Parsley (1 bunch), serve hot.
