Step 1
Cut
Spicy Hot Vegan Sausages (3)
into half moons.
Step 2
In a large soup pot, pour
Vegetable Broth (1/2 cup)
to cover the bottom of the pot. Add
Crushed Red Pepper Flakes (1/2 tsp)
,
White Onion (1)
,
Celery (3 stalks)
, and
Garlic (3 cloves)
. Cook over medium heat for 2 minutes, stirring frequently.
Step 3
Add
Green Bell Pepper (1)
,
Red Bell Pepper (1)
, and
Tomatoes (4)
. Stir then cover and let cook over medium heat for 5 minutes.
Step 4
Add spicy hot vegan sausages,
Cayenne Pepper (1 tsp)
,
Freshly Ground Black Pepper (1/2 tsp)
,
Brown Rice (1 cup)
, and
Vegetable Broth (2 cups)
. Mix well and bring to a full boil.
Step 5
Reduce heat to low, making sure all the brown rice is submerged in the vegetable broth. Cover and let cook for 30-40 minutes.
Step 6
Remove from heat. Adjust spice if necessary. Let sit in the pot, covered, for about 10-15 minutes until all liquid is absorbed. Garnish with plenty of
Scallions (1 bunch)
and
Italian Flat-Leaf Parsley (1 bunch)
, serve hot.
