Zest and juice the Orange (1) .
Step 2
Peel, core and grate the Apple (1) .
Step 3
Mix together Butter (1/2 cup) and Dark Brown Sugar (1 cup) , add All-Purpose Flour (1/3 cup) , Eggs (2) , Ground Nutmeg (1 pinch) and Ground Cinnamon (1 pinch) .
Step 4
Add the Baking Powder (1/4 tsp) , Breadcrumbs (2 1/3 cups) , Sultanas (1 cup) , Raisins (1 cup) , Currants (3/4 cup) , Almonds (2 1/2 Tbsp) , Rum (2/3 cup) and stir thoroughly. The batter should have a gooey consistency.
Step 5
Pour batter into the 8 pudding molds and cover with plastic film.
Step 6
Cook on shelf level 2 on the ‘Humidity High program at 95 degrees C (205 degrees F) for 2 hours.
Step 7
Serve the warm pudding with Whipped Cream (to taste) and garnished with Fresh Raspberries (to taste) , and perhaps a sprig of festive holly.
