Cooking Instructions

Step 1
Cook the Brown Rice (2/3 cup) by placing Water (2.6 lb) in the Thermomix jug. Pour the rice into the basket and place in the jug.
Step 2
Cook for 35 minutes on Varoma speed 3.
Step 3
Place the Fresh Cilantro (2 cups) , Fresh Parsley (3/4 cup) , Fresh Basil (1 cup) , Green Bell Peppers (1/2 cup) , Garlic (2 cloves) , Salt (1 1/4 tsp) , Water (2 oz) , Olive Oil (3 oz) , Pistachios (1/4 cup) and Lemon Juice (1 1/4 tsp) in the jug and blend on speed 5 for 1 minute.
Step 4
Pour into a pan (do not clean the jug yet) and cook on a low temperature for around 4 minutes, until you can begin to smell the aroma.
Step 5
While you are doing that, place the Milk (1 cup) into the jug and blend on speed 10 for 10 seconds.
Step 6
Pour the milk mixture into the pan and continue cooking until it thickens, about 10 minutes.
Step 7
Crack two Eggs (2) into the pan and crumble over Feta Cheese (2 Tbsp) , cover with a lid. Cook until the eggs are set but still runny, about 10 minute.
Step 8
Serve over brown rice. Enjoy!
