Step 1
Preheat oven to 400 degrees F (200 degrees C).
Step 2
Line a baking sheet with aluminum foil. Halve the
Sweet Potato (1)
and poke a couple of holes with a fork. Drizzle with olive oil and season with salt. Bake skin down for 40 minutes.
Step 3
In a small bowl, mash
Avocado (1)
with
Garlic (1 clove)
, juice from
Lemon (1)
, and season with
Salt (to taste)
and
Ground Black Pepper (to taste)
.
Step 4
Mix
Canned Tuna (1/4 cup)
,
Onion (1)
,
Sour Cream (2 Tbsp)
,
Cream Cheese (1 Tbsp)
,
Capers (2 Tbsp)
, and
Fresh Dill (1 tsp)
in a medium bowl. Season with salt and pepper if needed.
Step 5
Remove sweet potatoes from the oven and let them cool for 5-8 minutes.
Step 6
Spread one half with the tuna mix and garnish with capers and fresh dill.
Step 7
On the other half, spread the avocado mix and garnish with
Pickled Onions (to taste)
and
Grated Parmesan Cheese (to taste)
