Spinach Salad with Raspberry Poppy Seed Dressing

This recipe has some sweetness from the raspberry spread, creaminess from the greek yogurt, and the bright tartness from the apple cider vinegar. This combo works on any salad but we made a spinach salad complete with hard-boiled eggs and bacon.

Grapeseed Oil

or other Vegetable Oil

Plain Greek Yogurt

or your favorite Raspberry Jam

Spinach Leaves

Romaine Lettuce

Red Onion , thinly sliced

Red Bell Pepper , sliced

Roasted Almonds , chopped

Goat Cheese , crumbled

Cooking Instructions

In a medium bowl, whisk the Apple Cider Vinegar (2 Tbsp) , Plain Greek Yogurt (1 Tbsp) , Just Jan’s® Seedless Raspberry Spread (2 Tbsp) , Poppy Seeds (1 Tbsp) , Dry Mustard (1/4 tsp) , Kosher Salt (1/4 tsp) , and Ground Black Pepper (to taste) .

While whisking, slowly incorporate the Grapeseed Oil (2 Tbsp) until thoroughly combined.

In a bowl, toss the Spinach Leaves (2 cups) , Romaine Lettuce (1 cup) , Eggland's Best Classic Eggs (2) , Red Onion (1/4) , and Red Bell Pepper (1/2) with the dressing.

Top with Roasted Almonds (to taste) , Goat Cheese (to taste) , and Bacon (to taste) .
