Preheat oven to 350 degrees F (180 degrees C).

Bring a large pot of water to a boil. Chop the Sweet Potatoes (3), then throw them in. Cook for 15 to 20 minutes, or until fork tender, then drain. Mash until smooth then add Butter (2 oz), Milk (4 Tbsp), Vanilla Extract (1 tsp), Simply Organic Cinnamon, Ground (as needed), and Salt (as needed). Stir until combined and set aside until cooled (room temperature), then stir in the yolk from the Eggs (4).(reserve the whites).
