Preheat oven to 350 degrees F (180 degrees C).

Bring a large pot of water to a boil. Chop the Sweet Potatoes (3), then throw them in. Cook for 15 to 20 minutes, or until fork tender, then drain. Mash until smooth then add Butter (1/4 cup), Milk (1/4 cup), Vanilla Extract (1 tsp), Ground Cinnamon (1/2 tsp), and Salt (1/4 tsp). Stir until combined and set aside until cooled (room temperature), then stir in the yolk from the Eggs (4).(reserve the whites).
