In a slow cooker, add Garlic (2 cloves), Fresh Ginger (1/2 Tbsp), Yellow Onion (1), Carrot (1), Red Bell Pepper (1), Brown Sugar (1 cup), Sweet Chili Sauce (1/4 cup), Dark Soy Sauce (1/2 cup) and Water (1 cup). Stir together. Put the lid on and cook on high for 1 hour.
