Quick & Easy Chickpea Tacos

Chickpeas are one of my favorite beans and are about the most versatile bean in existence! They work well here served at room temp so there’s no heating involved making your taco preparation speed along. Of course, if you prefer your beans heated, by all means heat them up. These tacos have been a useful creation and a complete meal to boot. I hope you enjoy them as much as I do! Cheers :)

Ingredients

1 1/2 cup cooked Canned Chickpeas
1/4 head shredded Green Cabbage
5 White Corn Tortilla
to taste Sriracha

STEP 1
Slice the Avocado (1). Shred the Green Cabbage (1/4 head). Slice the Lime (1) into wedges.
STEP 2
Warm your White Corn Tortilla (5) carefully on the stove top over an open flame to give it some charring on the edges.
STEP 3
Layer your tacos with Canned Chickpeas (1 1/2 cup), shredded cabbage, avocado and Fresh Cilantro (to taste). Top with Mineral Salt (to taste), Sriracha (to taste) and a squeeze of lime.
STEP 4
So quick and easy... Serve and enjoy!
