Chicken , chopped
1 cup
Celery , chopped
1 cup
1/2 cup
Corn Kernels
1/2 cup
Scallions , chopped
1/2 cup
Dried Cranberries
to taste
Apricots , sliced
Any Fresh Fruit of Your Choice
to taste
Avocados , sliced
Dressing
1/2 cup
Mayonnaise
1/2 Tbsp
1 tsp

Step 1
In a large bowl, place Chicken (4 cups) , Fresh Blueberries (1 cup) , Celery (1 cup) , Grape Tomatoes (1 cup) , Corn Kernels (1/2 cup) , Slivered Almonds (1/2 cup) , Scallions (1/2 cup) , and Dried Cranberries (1/2 cup) .
Step 2
Whisk together Greek Yogurt (1/2 cup) , Mayonnaise (1/2 cup) , Honey (1/2 Tbsp) , and Salt (1 tsp) . Pour onto the chicken salad mixture. Toss until ingredients are coated.
Step 3
Top with Apricots (to taste) and Avocados (to taste) . Serve and enjoy!
