Carrot , peeled, sliced

Bok Choy
1.1 lb
Chicken , cubed
1/2 Tbsp
1/2 Tbsp
Sesame Oil

Chicken Stock Cube
1/4 cup
Oyster Sauce
1.1 lb
Rice Noodles
1 Tbsp
Vegetable Oil
5 cloves
Garlic , finely chopped
10
Snow Peas
to taste
Scallions , finely chopped

Step 1
Marinate chicken: take a large mixing bowl, add Chicken (1.1 lb) , Corn Starch (1/2 Tbsp) , Soy Sauce (2 Tbsp) , Sesame Oil (1/2 Tbsp) and mix well.
Step 2
Prepare the sauce: take another mixing bowl, add water, Chicken Stock Cube (1) , Caster Sugar (1/2 Tbsp) , Oyster Sauce (1/4 cup) . Mix well and set aside.
Step 3
Boil water in a big sauce pan and add Rice Noodles (1.1 lb) .
Step 4
Cook for 5 to 8 minutes and drain the water.
Step 5
Heat Vegetable Oil (1 Tbsp) in a deep bottomed skillet and add Garlic (5 cloves) .
Step 6
Add chicken and keep frying it till it turns to a pale color. Keep aside.
Step 7
In the same pan, add Carrot (1) , Zucchini (3) , Bok Choy (2) , and Snow Peas (10) .
Step 8
Add the prepared sauce and keep stirring until the vegetable is half way cooked.
Step 9
Add the chicken and noodles and toss them well.
Step 10
Garnish with Scallions (to taste) .
