This Quinoa Vegetable Soup is a bone-warming brothy soup that has the flavors of chicken noodle soup with the healthy-ness of vegetable soup (and it whips up in under 30 minutes!).

2 tablespoon Olive Oil
12 cup Vegetable Broth
1 teaspoon Fresh Thyme
1/2 teaspoon Dried Oregano
2 Bay Leaf
1 cup Quinoa
2 can (15 ounce) drained Chickpeas

STEP 1
Heat Olive Oil (2 tablespoon) over medium heat in a large pot. Add Yellow Onion (1), Carrot (2), Celery (3 stalk), and Garlic (4 clove), and cook until softened (about 10 minutes).
STEP 2
Add Vegetable Broth (12 cup), Fresh Thyme (1 teaspoon), Dried Oregano (1/2 teaspoon), and Bay Leaf (2), then bring to a boil.
