Red Onions , finely chopped

Jalapeño Pepper , deseeded, finely chopped
1 clove
Garlic , minced
1/2 cup
Tomatoes , chopped
to taste

Step 1
With a handheld immersion blender or a food processor, blend Fresh Spinach (1 cup) , Avocados (2) , and Lime (1) until a smooth puree is formed, scraping down the sides to get everything mixed nicely.
Step 2
Chop the remaining Avocado (1) into small chunks, then mix and mash into the puree, along with the Red Onions (1/4 cup) , Jalapeño Pepper (1) , and Garlic (1 clove) . Once you reach a consistency to your liking, stir in the Tomatoes (1/2 cup) .
