Step 1
Make the Spiced Apple Filling. In a sauce pan over medium heat, cook the Unsalted Butter (1 Tbsp) , Dark Brown Sugar (3 Tbsp) , Granny Smith Apples (3) , Ground Ginger (1/8 tsp) , Ground Cloves (1/8 tsp) , Ground Nutmeg (1/8 tsp) , Ground Cinnamon (1/4 tsp) , and Lemon Juice (1/2) , stirring frequently, for about 20 minutes. Drain off any liquid. Set aside.
Step 2
Meanwhile, prepare the Maple Whipped Cream. In the bowl of an electric mixer fitted with the whisk attachment, beat together the Heavy Cream (1 cup) , Pure Maple Syrup (1/4 cup) , and Salt (1/4 tsp) until soft peaks form. Cover and refrigerate until ready to use.
Step 3
To make the Pancake Batter, whisk together the All-Purpose Flour (1 3/4 cups) , Baking Soda (3/4 tsp) , Baking Powder (1 tsp) , Granulated Sugar (1 1/2 Tbsp) , and Salt (1/2 tsp) in a large bowl.
Step 4
In another container, lightly whisk the Egg Yolks (3) , then whisk in the Buttermilk (1 1/3 cups) and Sour Cream (1/2 cup) .
Step 5
Add the egg yolk mixture to the flour mixture and mix until well combined; the batter will be lumpy. Set aside.
Step 6
In the bowl of an electric mixer fitted with the whisk attachment, beat the Egg Whites (5) on high speed until stiff but not dry peaks form, 2 to 3 minutes. Using a rubber spatula, gently stir the whites into the batter in two additions.
Step 7
Make the Ebelskiver. Brush the wells of a filled-pancake pan with some Unsalted Butter (3 Tbsp) . Heat over low-medium heat until the butter bubbles. Pour 1 Tbsp of the batter into each well and cook for 2 minutes.
Step 8
Spoon a mounded 1/2 tsp of the apple filling into the center of each pancake and top with 1 more tablespoon of the batter. Cook until the bottoms are golden brown and crispy, about 2 minutes more.
Step 9
Using 2 skewers or toothpicks, carefully turn and flip the pancakes over. Cook until golden and crispy, about 3 minutes more.
Step 10
Transfer the pancakes to a plate. Repeat with the remaining batter and filling.
Step 11
In a small bowl, combine Powdered Confectioners Sugar (1 Tbsp) and Ground Cinnamon (1/4 tsp) and sprinkle lightly over the pancakes.
Step 12
Be sure to let the filled pancakes cool slightly before eating. Serve with maple whipped cream. Enjoy!
