Place the Zucchini (1 cup) in a colander and press out as much moisture as you can. Set aside.
Preheat a waffle iron.
Whisk All-Purpose Flour (1 cup), Baking Powder (2 teaspoon), Ground Cinnamon (1 1/2 teaspoon), and Salt (1/2 teaspoon) in a large bowl.
Add Milk (1 cup), Egg (1), and Unsalted Butter (4 tablespoon) mix until combined.
Fold in zucchini and Fresh Blueberries (1 handful).
Using a 1/2 cup measuring cup, scoop batter up and pour onto preheated waffle iron and cook according to your iron’s instructions.
Place a scoop of lemon ice cream on top. Serve and enjoy!
