Step 1
Place the Zucchini (1 cup) in a colander and press out as much moisture as you can. Set aside.
Step 2
Preheat a waffle iron.
Step 3
Whisk All-Purpose Flour (1 cup) , Baking Powder (1/2 Tbsp) , Ground Cinnamon (1/2 Tbsp) , and Salt (1/2 tsp) in a large bowl.
Step 4
Add Milk (1 cup) , Egg (1) , and Unsalted Butter (1/4 cup) mix until combined.
Step 5
Fold in zucchini and Fresh Blueberries (1 handful) .
Step 6
Using a 1/2 cup measuring cup, scoop batter up and pour onto preheated waffle iron and cook according to your iron’s instructions.
Step 7
Place a scoop of lemon ice cream on top. Serve and enjoy!
