Preheat the oven to 200 degrees C (400 degrees F).

Whisk together the Eggland's Best Classic Eggs (3), Milk (2/3 cup), Plain Greek Yogurt (2/3 cup) and Oil (3 1/3 Tbsp).

Add the Salt (2 tsp), Baking Powder (1 tsp), Corn Flour (1 cup) and All-Purpose Flour (1 cup). Mix well until smooth.

Fold in the Red Bell Pepper (1/2), Pickles (3), Button Mushrooms (3) and Deli Ham (2 oz).

Pour into a muffin or regular baking pan and bake for 20 minutes. After 20 minutes, insert a toothpick into the center and if the toothpick comes out clean, your muffins are done.
