Bacon , crumbled

Feta Cheese , crumbled
Queso Fresco, Cheddar Cheese
1 Tbsp
White Wine Vinegar

Lime , juiced
Two Small Limes
1/2 tsp
Garlic Powder
to taste

Step 1
Fry the Bacon (6 slices) and set aside. Reserve a tablespoon of bacon drippings.
Step 2
Cut Corn (3/4 cup) from the cob and brown quickly in the bacon drippings.
Step 3
Dice the Red Onions (1/2 cup) and Grape Tomatoes (1 1/2 cups) . Chop the Green Bell Peppers (3/4 cup) and the Avocado (1) . Dice the Pickled Jalapeño Pepper (1) .
Step 4
Gently add in Canned Black Beans (2 cups) , Black Eyed Peas (3 cups) . Crumble bacon and crumble in Feta Cheese (1 cup) on top.
Step 5
Juice the large Lime (1) . Make the dressing by combining Olive Oil (2 Tbsp) , White Wine Vinegar (1 Tbsp) , lime juice, Garlic Powder (1/2 tsp) and Salt and Pepper (to taste) . Whisk together well.
Step 6
Drizzle the dressing over the bean and vegetable mixture, then stir gently.
Step 7
Garnish with fresh Fresh Cilantro (to taste) .
Step 8
Serve with Corn Chips or as a salad or side dish. Enjoy!
