Fry the Bacon (6 slice) and set aside. Reserve a tablespoon of bacon drippings.
Cut Corn (3/4 cup) from the cob and brown quickly in the bacon drippings.
Dice the Red Onion (1/2 cup) and Grape Tomatoes (1 1/2 cup). Chop the Green Bell Pepper (3/4 cup) and the Avocado (1). Dice the Pickled Jalapeño Pepper (1).
Gently add in Canned Black Beans (15.5 ounce), Black Eyed Peas (15.5 ounce). Crumble bacon and crumble in Feta Cheese (1 cup) on top.
Juice the large Lime (1). Make the dressing by combining Olive Oil (2 tablespoon), White Wine Vinegar (1 tablespoon), lime juice, Garlic Powder (1/2 teaspoon) and Salt and Pepper (to taste). Whisk together well.
Drizzle the dressing over the bean and vegetable mixture, then stir gently.
Garnish with fresh Fresh Cilantro (to taste).
Serve with Corn Chips or as a salad or side dish. Enjoy!
