To prepare the marinade add Olive Oil (1 cup), Lemon (1), Garlic (1 clove) to a bowl. Mix well.
Add Ground Coriander (1 teaspoon), Paprika (1 teaspoon), Ground Cumin (1 teaspoon), Ground Ginger (1 teaspoon), Crushed Red Pepper Flakes (1 teaspoon), Onion Powder (1 teaspoon), Ground Black Pepper (1/2 teaspoon), Salt (2 teaspoon). Mix well.
Cut Eggplant (1), Zucchini (1), Red Chili Pepper (1), Tomato (2), Red Onion (1) and Yellow Bell Pepper (1) into pieces. Twist the stem off the Mushroom (8).
Place the vegetables in a large bowl. Pour the marinade all over. Mix well. Refrigerate for 2 hours.
Take the vegetables from the refrigerator. Put the vegetable pieces on the skewers.
Place the skewers on the working grill. Occasionally rotate them to let the vegetables cook from all sides.
When the vegetables are cooked, move them to the pan and serve. Enjoy!
