Step 1
To prepare the marinade add Olive Oil (1 cup) , Lemon (1) , Garlic (1 clove) to a bowl. Mix well.
Step 2
Add Ground Coriander (1 tsp) , Paprika (1 tsp) , Ground Cumin (1 tsp) , Ground Ginger (1 tsp) , Crushed Red Pepper Flakes (1 tsp) , Onion Powder (1 tsp) , Ground Black Pepper (1/2 tsp) , Salt (1/2 Tbsp) . Mix well.
Step 3
Cut Eggplant (1) , Zucchini (1) , Red Chili Pepper (1) , Tomatoes (2) , Red Onion (1) and Yellow Bell Pepper (1) into pieces. Twist the stem off the Mushrooms (8) .
Step 4
Place the vegetables in a large bowl. Pour the marinade all over. Mix well. Refrigerate for 2 hours.
Step 5
Take the vegetables from the refrigerator. Put the vegetable pieces on the skewers.
Step 6
Place the skewers on the working grill. Occasionally rotate them to let the vegetables cook from all sides.
Step 7
When the vegetables are cooked, move them to the pan and serve. Enjoy!
