What’s your favorite word related to cooking?

Crust.

What’s your earliest positive food memory?

My grandmother’s chicken and barley Scotch broth.

What’s your favorite cooking tool?

A temperature probe.

What do you crave when you have a cold?

That chicken and barley Scotch broth!

What do you cook when you’re happy?

Desserts!

Your ultimate guilty pleasure food:

Fried chicken.

What’s your favorite kitchen sound?

Bacon sizzling.

What’s your favorite cooking smell?

Roast chicken.

Who’s your favorite person to cook for?

My wife! Closely followed by my mother, of course.

You get invited to a dinner prepared by any food icon dead or alive, who is it?

Anthony Bourdain.

What do they say to you on your arrival?

"Good food is very often, even most often, simple food.”

What are your 5 top cooking tips or tricks?


  • The fewer ingredients, generally the better meal. Give flavors a chance to shine.

  • Buy a temperature probe! Game-changing for cooking meat!

  • Only put wine in food that you would happily drink. Corked or old wine tastes as bad in food as it does out of a glass.

  • Always buy the best meat you can afford. If that means eating less of it in the week, than so be it, but you’ll improve your meals and help proper farming in the long run.

  • Slow roast vegetables rather than boiling in water; you intensify flavor rather than lose it.

If you could sum up your cooking style into one sentence, what would that sentence be?

Well sourced ingredients, cooked simply but carefully, with a lot of pastry!
