It's filled with fiber and protein from the beans, healthy fats from the sun-dried tomatoes and olives plus a slightly bitter crunch from the radicchio leaves. It's an easy and fresh way to end your Monday. Make a little extra to pack with you for lunch tomorrow.

Grilled Lamb Shish Kebobs

These marinated lamb kebobs can also be made with another protein if you prefer, like chicken, steak or salmon. The marinade is made up of coriander, cumin, paprika and garlic. If you're good, you can prep them the night before but if you're in a rush, they'll still taste great if you make them right away.


Lox, Dill and Goat Cheese Yogurt Omelette


Who says you can't have breakfast for dinner?! Sad people, that's who. Filled with goat cheese yogurt and lox, this omelette is filling enough to have on it's own but you can pair it with a simple side salad for a little extra green touch. Save some goat cheese yogurt for Friday!

Use any extra chives, dill and shallots from yesterday's dinner in tonight's stew. Coming together in just 20 minutes, this really is a kick-ass weeknight dinner. It looks impressive but comes together easily and is 100% mediterranean diet friendly!

Baked Cajun Chicken Drumsticks

If you made the chicken drumsticks last night (go you!) then go ahead and take them out of the fridge to rest at room temp while you preheat the oven. Throw them in the oven and while you wait for them to cook, you can prep the salad. Peel and chop the veg and put them in 20 minutes before the chicken is done. Use the leftover goat cheese yogurt sauce for the salad.
