Onto the grill, add
Wright® Brand Smoked Bacon (to taste)
. Cook until crispy, then set aside. Leave the bacon grease on the grill.

On the grill, melt
Unsalted Butter (1 stick)
Red Onion (1/2)
. Mix together.
Red Bell Pepper (1/2)
Garlic (3 cloves)
. Let cook for a few minutes.
Add the bacon back onto the grill, along with
Cassava Flour (1 1/4 cups)
. Mix well.
Add the eggs back onto the grill, along with the
Black Olives (3/4 cup)
Fresh Parsley (to taste)
. Stir to combine and keep warm.
Going with the grain, slice the meat into steaks.
Coat both sides generously with
Coarse Sea Salt (to taste)
Grill the steaks.
Remove from heat and let rest for 10 minutes.
Plate the picanha around the farofa. Serve and enjoy!
