Cut Firm Tofu (14 oz) into thick slabs and set on a few layers of paper towels. Cover with a few more paper towels and set a heavy plate on top to press out excess moisture.

Meanwhile in a bowl, whisk to combine the Sesame Oil (4 Tbsp), Soy Sauce (4 Tbsp), Pineapple Juice (2 Tbsp), Rice Vinegar (1 Tbsp), Fresh Ginger (1 tsp), Sesame Seeds (1 tsp), Chili Garlic Sauce (as needed), and zest and juice of the Lime (1) to create a marinade. Taste and adjust to your level of spiciness.
