Cut Firm Tofu (14 oz) into thick slabs and set on a few layers of paper towels. Cover with a few more paper towels and set a heavy plate on top to press out excess moisture.

Meanwhile in a bowl, whisk to combine the Sesame Oil (1/4 cup), Soy Sauce (1/4 cup), Pineapple Juice (2 Tbsp), Rice Vinegar (1 Tbsp), Fresh Ginger (1 tsp), Sesame Seeds (1 tsp), Chili Garlic Sauce (1/4 tsp), and zest and juice of the Lime (1) to create a marinade. Taste and adjust to your level of spiciness.
