Who knew you could make a Mediterranean pressed eggplant sandwich with a stack of books? Pesto, mozzarella, grilled eggplant, and roasted bell pepper!

1 loaf Ciabatta Bread
1 Tbsp Olive Oil
4 Tbsp Basil Pesto
2 slice Prosciutto

STEP 1
Slice Eggplant (1/2) and Zucchini (1) lengthwise into 1/4-inch slabs. Lightly drizzle with Olive Oil (1 Tbsp) and grill about 5 minutes, until soft and slightly charred.
STEP 2
Place Red Bell Pepper (1) directly onto grill. Cook 10-20 minutes, rotating often, until outside is blackened.
