People usually think of Argentina when they think of empanadas but they exist all throughout South America. My favorite empanadas are Bolivian Saltenas. Growing up, we had Bolivian neighbors, and every now and then my neighbor would bring us a big plate of these.

These scream home to me; nostalgia and comfort. The unique soupy, spicy, sweet, and savory combination of these particular saltenas became a taste memory and is a go-to place in time.
