Poultry Power

Many of the easiest meals you can make revolve around the lowly chicken. Chicken takes a lot of heat for being dry, bland, and often uninspiring, but it doesn’t have to be. The paltry--or, poultry-- chicken can be a home run with our help, perfect for fueling your gym habit or getting “the nod” from your potential love interest.

Chicken can run the gamut from clip-on bow tie (eat it right out of the pan) to tailored suit (chicken confit). Starting from the bottom? You’re here. That’s a good start.

Monday: Roast (Whole) Chicken with Veg

Make this easy roast chicken (or two, or three) on Monday night and you’re set with meal options for the rest of the week.

Classic Roast Chicken

SideChef

This classic roast chicken is effortless to make. Once you try such a simple, easy, and deliciously juicy chicken with a side of roasted veggies, you will never buy rotisserie from the store again!

Prep Tips

For best results, pat your chicken dry inside and out. Season the whole bird with salt and pepper, and give it a robust slathering of olive oil.

It's the Inside that Counts

Don’t forget to show the inside some love too. If you’re feeling fancy, slide lemon or garlic slices under the skin for a little extra flavor. Fresh herbs will add much more oomph than dried but are technically optional.

Tuesday: Spicy Chicken Quesadillas

Hack up some of the nicely chilled chicken, ice fishing style, and throw it into these spicy quesadillas. It doesn’t need to be cute; it’s not a Frappucino.

Spicy Chicken Quesadillas with Corn, Black Beans, and Caramelized Onions

Domesticate Me

These quesadillas are an absolute delight. Juicy grilled chicken breast, sweet corn, caramelized red onions, scallions, and lots of melted pepper jack cheese between crisped multigrain tortillas create a festive, foolproof combo that’s fun for all ages.

Wednesday: Chicken Pasta

Hump day! You’re halfway there, still living on the chicken from Monday. This is a great carb-laden option if you’re running a marathon Thursday morning or if you equate pasta with happiness.

Greek Chicken Pasta

Chef'd

This super-simple pasta dish incorporates some of the fabulous flavors of Greece. Tender pieces of chicken, tasty artichoke hearts, salty feta, and bright lemon create that Mediterranean taste we love so much.

Thursday: Mexican Stuffed Peppers

Pro Tip: Using a pepper bowl decreases the total number of dishes you have to wash. We love it when food has both form and function!

Mexican Stuffed Peppers

Pip & Ebby

These yummy Mexican Stuffed Peppers are the perfect weeknight dinner! The peppers make a delicious edible bowl to fill with all kinds of protein and healthy stuffings. Top them with lots of cheese.

Friday: Hummus

Use up the last bits of your chicken by throwing them on some of this hummus, and you’re golden. Or at the very least, well-fed.

Simple Hummus

Panning the Globe

Homemade hummus is so much better than store-bought. You can taste the fresh, bright flavors of chickpeas, tahini, lemon, and garlic.

Impress Guests

Cooking for company? Try adding these essentials to a classic roast chicken to take the whole thing up a notch: pan gravy, roasted vegetables, and roasted potatoes.

Chicken Pan Gravy

Use a roasting tray from roasted chicken to make a delicious sauce that can be poured over anything you can think of.

Classic Roast Vegetables

SideChef

Toss in any of your favorite vegetables for an easy side dish that packs a flavorful punch.

Classic Oven Roasted Potatoes

SideChef

This simple trick takes your potatoes to the next level. The trick is to give 'em a good shake in a colander after par-boiling to rough up the edges. Fluffy on the inside, crispy on the outside.
