Vegan Love

Whether you're fully vegan or just looking to cut back on your meat intake, I know you'll love these dishes. They're easy to prepare, will keep you feeling full and give you a good intake of protein.

If you have some free time on Sunday night you can do some quick prep to make the week ahead even easier. You can make tomorrow's dinner today as the flavor only enhances overnight! You can also prep some of your vegetables that you'll use in the week, like your "pulled" mushrooms for Wednesday or your chopped peppers for Friday!

Monday

This Red Lentil and Spinach Masala is comforting, healthy and packed full of exotic flavors. It's super easy to put together and freezes great!
