Spruce Up Your Weeknight

I've put together some fun dinners to add to your weekly dinner rotation. These dinners can be made ahead of time and make for great leftovers. Let me know if you try any, I'd love to hear how they turned out!

Korean Pan Fried Tofu

If you're not sold on tofu, I promise you that this dish will change your mind. I've even seen avid meat eaters chow this down and LOVE it. Don't forget to pat dry your tofu beforehand to ensure crispiness.

Shells with Red Pepper-Tomato Sauce

This simple dish is a real life-saver during the week. Red bell peppers offer a delicious sweetness to an otherwise regular tomato sauce. It can be made ahead and stored in the fridge or freezer.

Tempeh Tacos with Avocado Kiwi Salsa

If you're a soft-shell taco fan, you can sub those in here instead. I love to top mine with extra jalapeño and thick avocado slices.

Roasted Vegetable & Caramelized Onion Farro Salad
